Almond Pie Crust
- 2 cups almonds (soaked overnight)
- 1/3 - 1/2 cup dates
Put in a food processor with a little water.

- 2 papayas

Broccoli-Waldorf Salad
- 2 cups broccoli, cut in small pieces
- 1 apple cubed
- 4 stalks celery, diced
- 1 cup grapes, sliced in half
- 1 cup walnuts (which have been soaked)

- 1/4 cup olive oil

Run yams through Champion Juicer using blank plate. Add honey and spices.

Carrot Pate'
- 5 carrots
- 2 cups almonds, soaked 12-48 hours and blanched
- 1/4 cup carrot or other fresh juice
- 1/4 cup finely chopped green onions
- 3 T lemon juice
- Celtic salt to taste
- Ground kelp
Process in food processor or champion juicer with solid plate. Roll in lettuce leaves, use
on salads, or rolled in Nori.

Cranberry
Sauce
- 2 cups raw
cranberries
- ½ cup ground flax
seed
- Raw honey (to
taste)
- ½ cup raisins
- 1 cup water
Blend cranberries, flax, honey, and water in blender until smooth. Mix raisins in by
hand. Chill in refrigerator until thick.

Endive

(for 10 leaf cups, double is needed)
- 1 head endive
- 1-2 carrots, grated
- 1/3 cup raw almond butter
- ½ cup almonds soaked overnight
Separate and wash endive leaves. Mix carrots and almond butter. Spoon into leaves. Top
with ground almonds. Arrange on platter.

- 2 cups cranberries, ground
- 1 orange, ground
- 4 stalks celery
- 1 cup walnuts (which have been soaked)
- 2 teaspoons stevia
Mix and Serve.

of choice (to make nut butter, freeze nuts to prevent overheating and run through Champion
Juicer using the blank plate. If juicer strains use oil to help it through. If desired add
salt and/or honey)

- 1 ripe banana
- 1 cup pitted dates
- Pumpkin pie spice
(to taste)
Grind dates in Champion Juicer or a hand crank meat grinder. Mix dates, pulp, honey,
and spice in a large bowl. Slice banana in ¼ inch slice (to dress the pie).

- Endive
- Arugula

- raw apple cider vinegar splash

Kohlrabi Jicama Salad
- 2#s kohlrabi
- 2#'s jicama
- 2 cups expeller pressed safflower oil
- 1 cup raw vinegar
- 1 cup coaked almonds
- 1T fresh basil
- 1T fresh french tarragon
- 1 T fresh Oregano
- 1 clove garlic
- 2 packets Stevia
Peel and dice kohlrabi and jicama. Pace in a bowl. In a hand grinder, grind herbs and
garlic. Place oil, vinegar, almonds, spices and stevia into a vitamix or blender and blend
until smooth. Pour desired amount of dressing over kohlrabi/jicama mix and serve. There

| Live Fries Slice
1 lb. jicama so it looks like French fries
Combine in a bowl with:
- 1 tablespoon onion powder (or garlic powder)
- 2 tablespoons extra virgin olive oil (or sesame oil which is better for aromatic flavor)
- sea salt to taste
- 1 tablespoon paprika (for hot and spicy live fries use
curry powder and/or cayenne pepper)
For decoration and more flavors sprinkle sweet bay leaves powder and/or cilantro

Nori Rolls
- 2 c. of almonds, soaked overnight
- 3 cloves garlic
- 1 c. chopped celery
- 1 ½ t. salt
- 1/3 c. olive oil
- ½ c. lemon juice
- 1 t. curry powder (or your favorite seasoning)
Additional ingredients: Slice the following into
thin, long strips:
- ½ avocado
- ½ large bell pepper
- 2 green onions
- sprouts
- shredded carrot
- 5 raw Nori sheets
Blend all the pate' ingredients in a food
processor until creamy. Spread the pate onto a sheet of nori and add the thinly sliced
vegetables. Roll up tight in nori sheet. Note: to make the nori sheets stick better you
can moisten them a little with water, lemon, tomato, or orange juice. Let the nori rolls
sit for 10 minutes and then begin slicing them into 2 inch slices. Makes 10-15 nori rolls.

- 2 parts water
- 1 part pumpkin
juice
- Raw honey (to
taste)
- Ground cinnamon
(to taste)
- Ground nutmeg (to
taste)
Juice
pealed pumpkin in juicer (save pulp for pie, crackers etc.). Add
honey and spices. Chill or serve immediately.

- Almond Pie Crust (see above)
- 2 cups shredded
pumpkin or butternut squash (no need to peel, most food processors have shredder
attachments)
- 1 cup dates
- ½ cup almonds
(soaked at least 8 hours, then peeled), or sunflower seeds
- 2 teaspoons
cinnamon
- 1 teaspoon ginger
- ½ teaspoon ground
cloves
- ½ teaspoon nutmeg
- ¼ cup water
Mix shredded pumpkin and water in food processor for several minutes. Add other
ingredients, and mix for several more minutes or until well mixed. Dump into pie crust.
Chill several hours before serving.

Royal Tropical Fruit Pudding
In blender:
- 2 large bananas
- 2 mangoes
(peeled!)
- 2 kiwi
- 3 avocados
- 12 large
strawberries

Sesame Seed Dressing
- 1 cup sesame seeds
- 2 cups filtered water for soaking sesame seeds
- ½ cup Rejuvelac or filtered water
- ½ cup chopped parsley
- 1 T. fresh oregano, chopped
- 1/4 cup olive oil
- 1/3 cup lemon juice
- 1/4 cup Nama Shoyu or 11/2 t. Celtic sea salt
Soak seeds in water for 2 hours. Drain. In blender, combine seeds and other ingredients.
Blend until creamy.
